Enjoying my version of Hong Kong milk tea.
I use some very fragrant & strong tea, a blend of Assam, Kenyan & Sri Lankan teas, in the ratio of 1 teaspoon of tea per 100 ml of water.
First, boil the water, add the tea and simmer gently for 5 minutes.
Then strain the tea into a fine mesh strainer (I use the filter insert for my cold-brew coffee jug) over a jug, pouring the brew through the strainer at least 5 times. Allegedly this reduces the tannin in the brew.
After the last pass through the strainer, return the tea to its heating vessel & bring back to boiling.
Pour into a big cup, (400 ml), add 2 teaspoons of honey and 60 mls of evaporated milk. Heat again, this time in the microwave on high for 15 seconds or so and enjoy.

The result is creamy, strong but not bitter despite being simmered for so long and with a hint of sweetness from the honey.

Tried a couple of different English mid-strength (3.6%) draught beers in 500ml cans in the last week. The brews were John Smith’s Smooth Bitter & Tetley’s Smooth Ale.

Tetley’s was disappointing: didn’t help that each of the four cans lost about 15% of their contents upon opening - I had to hold it over the kitchen sink to avoid spillage on other surfaces.
Disappointed in the taste as well. Too insipid. John Smith’s was a maltier, more bitter brew. I’d definitely buy it again.

The section of foot that’s blistered & covered with a burn dressing has been itching for at least 24 hours. I’ve been strongly resisting rubbing the spot but I don’t know how successful I have been.
Dr told me if the blisters had burst before the dressing was applied, then the danger of infection would be high & such an infection would take a long time to heal. No fun there. He prescribed a particulat antibiotic but not the one he wanted to prescribe.

Because some numpty somewhere in the system let the supply get drastically depleted to the extent the product is unavailable.
