Needing to burn a DVD from a disk image, I couldn't find the option to do so in Disk Utility in Sierra.
Why not? Because that's handled by the Finder now. Right-click the desired .dmg & select "Burn xxx.dmg to Disc" from the contextual menu items.
Rather easier than with Disk Utility but old habits die hard.

Shifting the connection to one of the full-powered USB 3·0 ports at the back of the iMac has made the directory replacement task much quicker.

This is remarkable: DiskWarrior 5 is struggling to replace the directory on a 300 GB partition of a 2 TB Ext HD. Might be because I've connected it via one of the unpowered USB 3·0 ports on the iMac's front-facing hub.
