Pumpkin soup is done! Added a litre of chicken stock to the roasted vegetables and cooked it for 15 minures in a pressure cooker. Then I mashed the vegetable chunks and puréed it all with a stick mixer. As it was far too thick I added another litre of chicken stock and blitzed it again. Now it's a fine, smooth yet thick soup. I also added a cup of milk to smooth it a bit more & mellow out the flavour.
