@matigo this stuff has been pasteurised but that's all that's been done to it. No homogenisation to distribute minute fat globules, no addition or subtraction of protein to maintain a "balanced" product (which tastes watery at best anyway). This stuff varies its fat & protein as the seasons progress. There are other milks made solely from Jersey cows but they're all homogenised and don't feel right on the tongue or in the mouth.
